How to replace carbohydrates with cauliflower?
Cauliflower is an immensely versatile veggie as it can make up for anything that is ‘bready’. Being a low carb veggie, it is a famous amongst paleo dieters. Low carb cooks have come up with lots of interesting ways to replace carbohydrates with cauliflower. Even if you don’t crave pizza, you will want to try these grain-free cauliflower versions.
1) Cauliflower ‘rice’
You can make ‘rice’ out of cauliflower. Just cut the florets and throw them into the food processor to turn them into rice-sized pieces. You are done! Now you can use this ‘rice’ to make almost anything! Add in a lot of other veggies you can make a yummy pulao! It doesn’t take a long time to get cooked. Being on a low carb diet doesn’t mean that you have to eat only boring food. Just think smart! To make cauliflower tortillas, you need to pulse the cauliflower florets in the food processer. Make it finer than rice. Steam the riced cauliflower and remove all the water from it. To a bowl add the cauli, 2 eggs and the seasonings you like an mix it up. Make balls out of the mixture and spread it on a baking sheet as small circles. Bake it in an oven and you are good to go!
5) Cauliflower ‘Hummus’
Hummus is a dip from the Middle East that is enjoyed a lot by people all over the globe. It is actually made with chickpeas but you can make it without a single legume! Use cauliflower instead to make it. It is a perfect dip for carrot sticks or bell pepper strips. For the recipe you simply need two cups of steamed cauliflower, 2 tbsp butter, 2 garlic cloves, red chilli flakes, olive oil, salt and lemon juice. Just put all these ingredients in the blender and blend well till you get hummus like consistency. After that, just enjoy!
