6 Low Carb Quick Snacks
Quick snacks are not unhealthy always. You need to take your picks wisely and you can enjoy yummy snacks without the guilt of fats and calories. Here are some quick snacks that are low in carbohydrates and make you feel full quickly. Try these Low Carb Quick Snacks-
Fried Brinjal Slices
Ingredients
1 brinjal, about 450 g, cut into 1/4″slices
Oil, for frying
Breading mixture-
3/4 cup almond flour
3/4 cup grated parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
Salt and pepper, to taste
2 eggs
Recipe
Mix all the dry ingredients for breading in a bowl.
Whisk eggs in a bowl. If you want only egg whites then use 3 eggs.
Heat oil in a pan.
Coat the brinjal with eggs and then with the dry breading mixture.
Fry in oil till the slices turn golden on both sides.
Drain the oil on paper towels and enjoy the brinjal slices.
Paneer Tikka
Ingredients
1/2 kg Paneer cubes, about 1.5″ each
1 tsp Chaat Masala
2 tsp Chilli Powder
2 tsp Garlic Paste
2 tsp Ginger Paste
1 Tandoori Masala
1 tsp powdered Black Pepper
Oil for brushing
1 tbsp Salt
3 tbsp Vinegar or 1 cup Yogurt
1 Onion, sliced into rings – for garnish
Recipe
Take all the ingredients except onion rings in a bowl, mix well and leave for30 minutes.
Place the paneer on a drip pan and bake in pre-heated oven for 10 minutes.
Take out, brush with oil and bake for another 10 minutes.
Garnish with onion rings and serve.
Boiled Egg Salad
Ingredients
Boiled eggs
1 tea spoon mayonnaise
Salt
Pepper
1 tea spoon White vinegar
Salad veggies like tomato , cucumber
Recipe
Mash the eggs into small pieces.
Add in the rest of the ingredients, mix well and enjoy.
Chicken Tikka
Ingredients
1 Tbsp olive oil
1 cup diced onion
1 1/2 tsp cumin powder
1 1/2 tsp ground cardamom
2 tsp coriander powder
1 tsp turmeric powder
1/4 tsp ground cloves
1/4 tsp ground cinnamon
Red pepper flakes, to taste
2 tsp minced fresh ginger
2 tsp minced garlic
2 Tbsp tomato paste
750 gram petite diced tomatoes
3 chicken breasts, no skin, diced (about 1 lb 9 oz)
Recipe
Heat 2 tbsp oil in a pan and saute onion in it.
Add cumin, cardamom, coriander, tumeric, cloves, cinnamon, and red pepper flakes and saute for a minute.
Add ginger, garlic, tomato paste, and diced tomatoes and bring to boil.
Lower the flame and add chicken. Simmer till the chicken turns soft.
Chicken tikka is ready and you can garnish it with yogurt or lemon.
Peanut Salad
Ingredients
Raw peanuts – 1 cup
Onion -1, chopped
Tomato – 1, chopped
Raw mango – 1/3 cup, chopped
Carrot – 1/4 cup grated finely
Green chillies -1 finely chopped
Spice powder-
Red chilli powder -1/4 tsp
Roasted cumin powder -1/2 tsp
Chaat masala- 1/2 tsp
Salt to taste
Fresh lemon juice to taste
Cilantro leaves, chopped
Recipe
Soak peanuts overnight and pressure cook with some water and salt until soft.
Take boiled peanuts, onions, tomatoes, green chillies, mangoes, grated carrot in a bowl.
Add in chilli powder, cumin powder, chaat masala and fresh lemon juice to taste. Add salt as needed and stir the mixture.’
Garnish with chopped cilantro leaves and serve.
Grilled Pineapple
Ingredients
1 ripe pineapple, cut into half inch slices
For the marinade-
2 tbsp honey
1 tsp olive oil
1 tbsp lime juice
1 tsp ground cinnamon
Recipe
Mix all marinade ingredients together in a bowl.
Brush pineapple pieces with the marinade and set on a grill rack.
You can cook this on any kind of grill.
Cook for about 5 minutes on each side till the pineapple pieces turn tender.
