Ingredients: ( serves 4)

  • 3 cups thinly sliced Bok Choy

  • 1 cup cabbage

  • 1 large red pepper, sliced

  • 1/2 cup shredded carrots

  • 1/2 cup chopped cucumber

  • 1/2 cup sliced green onion

  • 1/4 cup chopped cilantro leaves

  • 1/2 cup peas. blanched

  • Salad Dressing

  • 2 Tbsp low sodium soy sauce

  • 1 Tbsp gur

  • 1 Tbsp white vinegar

  • 2 tbsp lime juice

  • 1 Garlic clove, minced

  • 1 tbsp fresh minced ginger,

  • 1 Tbsp sesame and olive oil


1. Place all the salad ingredients in a large bowl and toss to combine.

2. To prepare dressing, mix all salad dressing ingredients.

3. Spread dressing over salad and gently toss.
