I have been busy, but this is no way implies that I compromise on my work out schedule, whether it’s a jog in the new neighborhood or a new yoga class and yes finally getting my hands on the gym. I finally managed. It felt like I was thirsty for water 😉
So you all may re-call the new phase of my life, post marriage, post new job, post hectic lifestyle, post no momma to take care of my meals. So I am my own caretaker. Oh yes, Husband is very supportive in all this. He eats brown rice, munches on nuts and my new muse called Appe. So let me guide you to my current favorite, which is very easy to make:
Healthy Vegetable Appe and Peanut Chutney Recipe
Things you will need:
Curd- 1 Cup,
Suji/raggi idli mix available at stores- 2 cups,
Grated carrots- ½ cup
Grated cabbage-1/2 cup
Green chilies- optional,
Turmeric- just a pinch
Cumin seeds (jeera) -1 teaspoon,
Mustard seeds- 1teaspoon,
Salt to taste.
How to make Vegetable appe:
Mix suji/rawa in the curd stir well and make sure no lumps are formed. Let it sit for 2-3 hours. In a separate pan, take some rice bran oil and add some mustard seeds, when they crackle add some jeera along with curry leaves along with green chillies, add grated carrots and cabbage, steam cook for a while(simply cover the pan), add some turmeric powder. You can add red chilli powder if you wish to.
After the veggies are done, mix them in curd batter. Mix well, add salt according to taste.
Now you need an appe pan, I have a non-stick one with a lid and a turning stick. It is easily available online, as well at any home stores.
First, heat the appe pan and line with some oil, pour into each appe mould a spoonful of the rawa batter. Cover with lid on low sim. After 5-7 minutes, flip the appe on the other side carefully. The appe should be golden brown on each side. You can insert a knife to see if the appe comes out clean to check whether they are cooked or not. Serve hot with peanut chutney.
You can make many versions of appe, like add coconut, peanut powder etc. But this one I simply loved due to the crunchiness of the veggies. I have a chopper to give me all chopped veggies in a minute. I find it very easy to make. I think whoever is short on time, should try this recipe. I prefer eating in, so I keep trying these variations. Will share more soon 😉
