Lauki Palak Soup For Weight Loss
There are some days when you don’t feel like making anything time consuming for a meal, especially for dinner. For me, every day happens to be such a day. 😛 when I don’t feel like cooking anything special. I just dig inside the refrigerator and pick up anything that comes in my hand. Last week it so happened that there was nothing but a bottle gourd, some spinach, green chillies and two bell peppers. In fact, I won’t be wrong if I say that these three four veggies along with cucumbers are staples in my refrigerator. So I decided to cook off  a simple soup which is filling and appetising too.
Lauki Palak Soup Recipe For Weight Loss
Ingredients

Lauki or bottle gourd – half kg

Spinach Leaves – 250 gm

Bell peppers – a spoonful chopped as you like
-
Instant Oats – two tbsp
-
Cream or yogurt – two spoons
-
Ghee – 1 tsp
-
Zeera – half tsp
-
Jalapeno or green chilly.
Preparation
Peel and chop bottle gourd in small chunks.
Wash and break spinach leaves with hands. No need to chop as we have to make them go through the blender.
Method

In a pressure cooker throw lauki chunks and spinach with half a glass of water.

Cook well to make lauki soft.. (three whistles)

Open the cooker lid and let it cool.

When cool transfer to the blender.

Blend well to make a nice smooth pulp.

Take a kadhai and heat a tsp of desi ghee.Â

Add zeera tadka when ghee is hot.
If you have green chilly, chop it lengthwise and add. I had Jalapeno so added one. I like my soups and stews real spicy especially during winters.
Now add the spinach and bottle gourd blend to the tadka.
When it starts boiling add instant oats. Mix and let it simmer on low heat. Adding oats make this recipe a complete meal and the soup thicker.
Sprinkle salt and pepper after switching off the gas. One should always add salt after cooking soups because at times it becomes thick and there are always chances of getting an over salty taste.
I like some nice crunch in soups so added a bit of chopped bell peppers on it.
Now to garnish you have two options. Either use cream or yogurt (curd) I prefer curd as i like the tanginess of curd better than sweetness of cream.
So that is it… my easy, healthy complete meal, “Lauki Palak Soup”. If you are a person who hates working hard for making dinner yet wishes to have something real tasty, then this recipe is for you. Enjoy your lethargy and good taste as well as good health all at the same time.
This is a great recipe if you have a diabetic at home. A kind of perfect dinner. 🙂
