I am sure you are bored of having same old boiled veggies, salads and foods to maintain a proper weight. The recipe I am going to share right now is super tasty and you don’t need to worry about your weight. Why? Because this recipe has no such ingredients that would add more pounds to your current state! 😉 This recipe is high in fibre, vitamin A, C, it’s rich in protein and low in fat and yes!! It aids in weight loss! So let’s quickly take a look at the ingredients list!!

  • 1-2 cups chicken – cut lengthwise.

  • 2-3 baby corn – crosscut.

  • 1 large onion – chopped.

  • 1 tablespoon garlic – finely chopped.

  • 2 tablespoon spring onion – chopped.

  • 2 tablespoon garlic leaves – crosscut.

  • 2 chilli – crosscut.

  • 1 tablespoon extra virgin olive oil.

  • 5 tablespoon lemon juice.

  • 1 teaspoon black pepper.

  • Salt according to your taste.


How to marinade the chicken:

  • Take 2 tablespoons of lemon juice in a small bowl (and keep the remaining 3 tablespoon of lemon juice for later purpose). Add ½ teaspoon of black pepper and salt each. Mix.

  • Wash your chicken pieces and pour the marinade syrup of lemon and pepper-salt that you just made, all over your chicken pieces. Mix thoroughly. Refrigerate it for an hour or two.

 How to cook:

  • Add olive oil and toss in the chopped onion and keep stirring it on high flame.

  • Add garlic and chilli when onions turn translucent.

  • Add baby corn when garlic gives off a cooked smell instead of a raw smell. Stir on high flame for a minute or two.

  • Take out your marinade chicken from fridge, squeeze them really well and add your cold marinade squeezed chicken pieces to your pan. Add salt and mix it really well keeping it on high flame until they turn light golden brown in color.

NOTE: once you take the marinade chicken out of your fridge, you are going to notice the chicken pieces have turned pale and released a lot of water in the bowl. When you squeeze the pieces, don’t discard the squeezed lemony water syrup. Keep it, you are going to need it in the next step.

  •  Add the lemony water syrup to your pan, mix, lower the flame and cover it. Keep it covered until your chicken pieces get cooked thoroughly. Add about 2 tablespoon water if your chicken needs it to get cooked. (I didn’t need it, my pieces turned soft just within 3minutes after I added the lemony water to it.)

  • Uncover, turn your flame high and add the spring onions.

  •  Add the garlic leaves next and pour in the remaining 3 tablespoon of lemon juice. Mix it really well and serve while it’s still hot!!

  • If you want you can add the marinade chicken directly without squeezing the water out. I prefer squeezing it because that way the chicken takes up and absorb the garlic and baby corn juices and tastes superbly good!
