Cauliflower is the first love of all low carbers. There was a time when my kitchen used to smell all the time of boiled cauliflower. I was all the time thinking of various ways to cook cauliflower. Then one fine day I tried my hand at using cauliflower in making pancakes. Here is what I created … my Low Carb Gluten Free Recipe- Cauliflower Pancakes

Low Carb Gluten Free Cauliflower Pancakes- Aren’t those pretty!

Let me tell you, this recipe is as wonderful a dessert as a snack or breakfast. I created this because I was craving sweet. If you too are on low carb diet and have sweet tooth, then here your search comes to an end.

Cauliflower Pancakes – Low Carb Gluten Free Recipe

INGREDIENTS (two servings)

  • Cauliflower – Raw, 50 g

  • Egg –  1

  • Unsweetened Cocoa Powder, 10 gm

  • Isabgol Psyllium Husk, 1 teaspoon

  • Stevia according to taste.

  • Eno Fruit Salt

  • Vanilla essence

FOR TOPPING

  • Strawberries –  40 g

  • Fresh Cream – 4 tsp

  • Thick curd, 20 g

  • Stevia according to taste.

Cauliflower Pancakes Easy Recipe-

  • Wash cauliflower properly.
  • Throw egg, cocoa powder, psyllium husk and stevia with cauliflower in a blender.
  • Mash and blend well.
  • If you find it thick then add a bit of milk.
  • When nicely beaten and fluffy, add in Eno salt and essence.
  • Batter should look like this– Fluffy and stiff not runny.

  • Pour batter in microwave safe bowls and micro high for 5 minutes.
  • Let it cool down before you take the pan cakes out.
  • The pancakes will be like this.

Low Carb Glutten Free Cauliflower Pancake Recipe (2)

  • Keep aside to let them cool and settle down.
  • Prepare topping by then.

TOPPING

Ingredients –

  • Strawberries –  40 g

  • Fresh Cream – 4 tsp

  • Thick curd, 20 g

  • Stevia according to taste.

Recipe-

  • Add all topping ingredients together in a blender and blend well to make it nice and creamy mixture.
  • When ready with no lumps keep in the freezer for it to set.

When pancakes are ready, take them out and place upside down. It will be like a bowl with twisted sides. Pour and spread topping on them. Sprinkle a bit of crumbled Paneer on top and place a slice of strawberry before serving.
