Low Carb Grilled Eggplant Slices with Cheese And Fish Mash
So finally Navratras are over and it is again time to go back to my low carb diet. So here I go back to my fish and cheese and veggies. Today I am going to share a recipe that I made last night for dinner and saved some for today’s breakfast too. Saving your favourite dish for next day isn’t that difficult when everyone else in the family just hates that main ingredient… Fish in this case.
Low Carb Grilled Eggplant Slices with Cheese And Fish Mash
Ingredients:
-
4 fish fillets.

4 Round slices of Eggplant
-
2 Cheese slices
-
Olive Oil for shallow fry
-
Salt
-
Chili Powder
-
Tomato and capsicum slices for garnish
Method
- Marinate fish fillets in salt, olive oil, vinegar and red pepper powder. (I buy a kilo of fish, marinate fillets and store in freezer for use.)
- Shallow fry in a grill pan, then shred them with a fork taking all the bones off carefully.
- Slice round eggplant or brinjals and shallow fry them too as shown in picture.
- On each slice place a slice of tomato and half a slice of cheese. Let it be on hot grill pan for a while till cheese melts a bit.
- Make small balls of fish mash and place on each eggplant base. Slowly turn over and grill a bit. Since the fillets we used were already cooked so there is no need to cook the balls as such but a bit of golden brown touch feels good to eyes and taste.
- Â Once ready plate up with a few tomato and capsicum slices. Four fillets got me eight eggplant fish mash slices ready. Hmmm!! well quite a bit for my one dinner and a breakfast with some simple raw salad.

So here as you can see each serving has just 7 gm carbs which is pretty good; and proteins… OMG!!!  13 gms. thats just superb… isn’t it? Fiber 2 gm that makes NET CARBS just 5 gms. Too good. Oh dear I love myself. 😉
With fat content as high as 16 gms this recipe fits well in the list of LCHF foods too. So one recipe for LCHF, Low Carbers (Atkins and Paleo) every one sooper dooper hit. 🙂
See why I love myself is because finally I have learnt the art to create my own low carb cuisine :)… it surely feels great. Pick up a few low carb ingredients and then shuffle your brain hard to think of combinations and tastes in mind and then think of the easiest way to create something yummy. (That is the most important thing for me creating a dish in the minimum possible time :P….. very impatient cook I am) So now what I am going to do is challenge you all to create a low carb dish which can be cooked in 15 to 20 minutes. Let’s see how many of you can do it. 🙂
