- It is rich in the trace mineral chromium that is known to help control the levels of glucose in the body.
- Red onions have a low glycemic index of 10.
- It is a rich source of the vitamins C and B6 and also the mineral chromium.
White and yellow onions
Yellow onions are known to contain higher concentrations of antioxidants than other varieties of onion. It was found that white onions contained 10 times lesser flavonoids than the Western Yellow variety of onion. Of all the onions tested in the lab, yellow onion extracts were the best at preventing the growth of cancer cells.
The white and yellow onions also vary from red onions in their taste on being cooked.
