Hows your Sunday ? Did you cheat πŸ˜› ? I had Paani puri on Friday as planned πŸ˜€

I am sharing with you a Quick Low Carb Vegetable Salad Recipe which has become my go to salad. I have this at night and I am full. Sometimes when you are busy, you might not be able to plan and prepare sour cream or mayonnaise , hence my quest for good low carb sauces began. I have tried 3 of these, will review them soon. Using this sauces, salad preparation will just take time that you need to chop the veggies, that’s all πŸ™‚ . Let’s begin –

Ingredients

You can add any low carb veggies, choose from here. I used below ingredients –

  • Cucumber

  • Onion

  • Tomato

  • Broccoli

  • Lettuce

  • Yellow capsicum

  • Pineapple

  • Salt and Pepper , as per taste

  • Extra Virgin Olive Oil – 2 tsp

  • Mustard Sauce

  • Caesar Salad Dressing Sauce

Method

  • Boil 2 glasses of water with salt to steam broccoli.
  • Chop broccoli into florets and add to boiling water and cover the utensil with a plate. If you have microwave, you can use it to steam broccoli.
  • Chop all the veggie, meanwhile the broccoli gets ready.
  • Transfer all the veggies and broccoli in a big container. Add olive oil and mix.
  • Meanwhile chop pineapple. You could add cottage cheese too. These should be added at the last.
  • Add sauces, salt , pepper as per taste and mix.

    After searching many shops,got the sauces as seen in pic.And say what missed on the Extra Virgin olive oil.It will be good if i know what brand of olive oil u use. And more over i am planning to prepare in morning(by 10 am) and carry to office for dinner at 6:30 pm. Can i do it.. I really want to try,as i never done it before.

    • Hi Satish,
      Which city do you reside ? You could have asked me, I would have helped you out. Never mind, use the mustard sauce a little less , that’s a little higher in carbs as compared to the other one.
      I can give you a better idea. Steam broccoli at night and chop all the veggies. Keep them in your lunch box. In the morning, sprinkle EVOO and sauces but don’t mix. Carry it to work and when you are about to have, then mix it and add salt, pepper if you want. Use a good lunch box which you can microwave and refrigerate , this will help you carry a lot of other things as well. This reminds me I should do a post how i carry my lunch n snacks, will do it soon.

      I have used Figaro and Borges EVOO, both are good. Hope that helps πŸ™‚

    Good Idea,by cutting vegetables the night before,we can plan correctly.. I tried it today in a hurry while leaving to office. Say what, i missed on Broccoli,pineapple,Yellow capsicum,salt,pepper,Extra Virgin Olive Oil(most of them in list) and also mixed the sauce with hand in hurry.(have to wash hands for 5 min in office to get the smell away.) Because of half ingredients felt some bitter taste.
    Will be really useful if u post a article on preparing of lunchbox(not sure how u prepare and carry soups :(.
    And friend, i reside in Chennai. And your articles are really helpful,knowledgeable,practical and makes me to do.
