Dr.Stillman was a physician who worked with overweight patients. He happened to discover one of the earliest low-carb diet back in the 1960s. He felt that the quickest weight loss occurred in individuals who followed a low carb and low fat diet. His diet has more of low-fat protein and promises a quick loss of weight.

He also wrote a book titled ‘The Doctor’s Quick Weight Loss Diet’. He happened to develop variations on the diet that included exercise and another version for teenagers that had an addition of limited carbs. However, the original Stillman Diet is all about high protein, low carbs and low fat.

The Stillman diet recommends eating 6 small meals a day and follow two main rules. The first rule is to drink 8 glasses of water a day. The second rule is to eat only lean meat, poultry (without skin), eggs, sea-food and no-fat cottage cheese. The food should be boiled or baked and never fried or cooked in an oil of any kind. Apart from water, you can drink tea, coffee and diet soft drinks. Common spices like salt, pepper and garlic are allowed. However, the condiments should be oil free.

Foods that are not allowed in the diet are carbs, veggies, fruits and fats (including butter and vegetable oil). Sugar and alcohol are also forbidden.


The Stillman Diet helps in rapid weight loss as there is a severe restriction of carbs. The restriction makes the body break down fat for energy. Also, the body needs to use up more energy in order to break down all the protein consumed. Breaking down of proteins is not as easy as breaking down carbs, so more number of calories are used up during metabolism. The process of using fat for energy is called ketosis.

Ketosis leads to the production of acidic substances called ketone bodies. When there is ketone build up in the blood, a really serious condition called ketoacidosis occurs. In order to reduce the levels of ketones in the blood it is extremely important that you drink sufficient water.

The signs and symptoms of ketoacidosis are as follows:

  • Fruity smelling breath
  • Nausea
  • Loss of appetite
  • Vomiting
  • Fast and deep breathing

The pros of the diet are that it is easy to follow and gives really quick results. Stillman claimed that by following his diet people lost 3.5 kgs to 7.5 kgs in the first week and 2.5 kilos every week after that. He had also suggested that people on his diet should switch over to a calorie counting diet once they are just 1.5 kg away from their goal.

The diet definitely has its cons too. The food choices are limited and this makes the diet unhealthy and not balanced. The diet lacks fibre as people on the diet shouldn’t eat veggies, fruits or carbs of any form. Now a diet without fruit and veggies cannot be regarded as a healthy diet.
